At Green Olive at Red Hill, sustainability isn’t a buzzword it’s a way of life.
Nestled in the heart of Victoria’s Mornington Peninsula, our 27-acre olive grove and vineyard has been carefully transformed from a blank paddock into a flourishing, sustainable farm. Today, it’s a thriving landscape filled with wild kangaroos, native birds, produce gardens, and over 600 olive trees all nurtured through environmentally conscious practices.
We’re proud to be a Sustainable Tourism Accredited Business with the Australian Tourism Industry Council and are currently working toward ECO Certification with Ecotourism Australia. Through the Strive 4 Sustainability Scorecard, we’ve evaluated our environmental, socio-economic, cultural, and management impact, ensuring our efforts align with best practices for sustainable and regenerative tourism.

Our Sustainability Highlights
- 39kW Solar Power: Fuelled by sunshine, not the grid.
Our 39kW solar system powers our kitchen, farm shop, irrigation, and more helping us become carbon-conscious and future-ready. - 300,000L Rainwater Tanks: We run on rain—no mains water.
We collect and use over 300,000 litres of rainwater across the farm, conserving resources and supporting a sustainable water cycle. - The Dam Does It All: Nature waters our farm and flushes the loos.
Our on-site dam irrigates pastures, fills stock troughs, and even flushes the toilets, supporting a circular water system. - Coffee Grinds = Compost: Every cup helps our garden grow.
All used grinds are composted and returned to the soil—true farm-to-table-to-farm thinking. - Native Trees, Always: More shade, more birds, more life.
Our revegetation supports biodiversity and creates habitats for native wildlife across the farm. - Recycle Everything: Nothing wasted, everything sorted.
We separate all waste and compost all organic material, ensuring minimal impact on landfill. - Grown Here. Served Fresh: Garden produce, no detours.
From tomatoes to figs, lemons and edible flowers, our menu heroes are grown onsite minimising food miles and maximising freshness. - We Clean What We Use: Our own treatment plant keeps it circular.
Black and grey water is treated and reused to irrigate non-edible plantings, closing the sustainability loop. - Leave It Better Than You Found It: Guests don’t just visit, they help the farm thrive.
